Ingredients:
1/2 C. Ricotta Cheese
1/2 C. all purpose flour
1/4 tsp. chili powder
1/4 tsp. salt (adjust to taste)
20 slices of pickled jalapeno
2-3 T. water
T. = Table spoon, tsp. = teaspoon
Method:
In a mixing bowl add all the ingredients except the water and jalapeno slices. Mix throughly using a wire whisk or a big spoon. Add a small amount of water and mix by hand. The consistence of the mixture needs to be similar to soft roti dough (do not add too much water).
Make bite size fluffy balls with a jalapeno slice tucked inside and deep fry them in cooking oil at 325 to 350 degrees till the cheese balls are golden brown. Drain them in a paper towels. Serve them with cilantro or mint chutney as an appetizer or an afternoon snack with coffee or tea.
These ingredients will make about 20 bite size jalapeno cheese balls these can be served for 3 or 4 as a light tiffin.
Caution: Please use the back burners for deep frying, always. Please protect your eyes wearing goggles or eyeglasses to prevent injury from spurting of hot oil.

ReplyDeleteYes, fried Jalapeño cheese Balls can be frozen then re-hated in a toaster oven when required but the freshly fried ones really taste great. One can also make the Jalapeño cheese Balls and place them individually in a cookie sheet and freeze them for 3 hours, then save them in a zip-lock freezer bag. When you want to fry them be careful oil will spatter all over. It is better to briefly back them before frying them to avoid the spattering. Directly adding frozen items in hot oil surely spatter all over. So avoid frying frozen foods while they are still frozen.
